Part of WOOMOB-1391

Description

This PR adds the view model for the booking list and add basic details for loading bookings.
The UI will be added in a separate PR for easier review.

Testing steps

The view hasn't been added yet so just CI passing is sufficient.

Testing information

Added unit tests for the view model
